of the sea salt, is produced.
The location of the Salinas is the RIA FORMOSA Natural Park (a reserve for shell fish and other marine life) where the mud is of a special quality.
Product of excellent quality, this salt is today consumed in the best restaurants of Europe.
Tavira ( Ria formosa ) is also the gathering place of a unique variety of wild life,
being classified as a Natural Reserve.
There occurs thousands of birds, of tens of species,some threatened and only found there.

The Salinas is divided in separate areas to allow for the formation and collection of the salt. These three areas are 1, a large deposit of sea water; secondly an area of evaporation and concentration, the third area is for crystallization and collection, production is between 60 to 80 tons of Flower of salt and 800 to 1000 tons of Traditional Sea Salt.
The location of the Salinas is the RIA FORMOSA Natural Park (a reserve for shell fish and other marine life) where the mud is of a special quality. It is close to where the ocean enters the park which is important to the quality of the final product; this can be proved by the appearance of the pans the analysis of what they produce and the subsequent certification.
The area is also a long way from any polluted areas, which of cause also affects the quality. Within the Salina is a storage and packing unit of 1500m2 with a height of 3 meters and a capacity of 3000 tons, which is well constructed with separate areas designated for storage and packing.
It is from here that the distribution occurs, where it is ensured that the quality is as required by the authorities for culinary use.
This producer pioneered the production of flower of salt in Portugal 2 years before the other producers, initially for export and later for the home market. This product has been collected for years from the edge of the salt pans for consumption by the owner and his friends.
There exists a control of the product and its quality, this knowledge has been passed down verbally through the family.
This knowledge and experience over a long period of time of the product, the collecting storage and packaging has been enhanced by the advance in new ideas in collecting, which in turn has led to better storage and transport methods.
